What is the difference between allergies, sensitivities and intolerances to foods?
FOOD ALLERGY - It is an immediate reaction. You feel it soon and it comes fast. Like getting skin rash after eating shrimps. Like swollen throat after eating peanuts. Like getting hives after eating berries.
FOOD INTOLERANCE - It is a digestive system intolerance to certain foods. Like heartburn after hot sauce or Mexican food. Like diarrhea after fettuccini Alfredo or like indigestion after egg-salad. You feel it coming. You know when it hits you.
FOOD SENSITIVITIES - Contrary to the above two, you don’t feel the food sensitivity. The reactions don’t come fast and are so silent, you may never know you are suffering from them. These are the object of this review. (some authors exchange the names and they call food allergies to food sensitivities)
Food sensitivities are slow immune-reactions triggered by food particles that leaked through the gut. These food particles tease and annoy the immune system forming food-globulin complexes that hurt the metabolism anywhere in the body. As unpredictable as Nature itself, these metabolic attacks may occur in any organ:
--they may attack the nose and sinuses in some individuals causing many years of nasal congestion, recurrent sinusitis, itchy nose, sneezing.
-–they can cause weight gain, or diarrheas, or attention deficit, or headaches
--they may hurt the lungs causing asthma, cough or wheezes
--they can cause allergies, or indigestions
--they may hurt the head or the brain of some people causing headaches, memory problems, learning disabilities, confusion

Food allergies causes reactions that are quick and obvious. Food sensitivities cause reactions
that are neither quick nor obvious, but they are rather slow and unknown to the person.
Because sensitivity reactions to foods can develop up to 3 days after eating, most people have difficulty connecting the food with their sensitivity. Besides, symptoms are vague, chronic and not severe which is why awareness of this condition is low.
Some food particles irritate the lining of the intestine creating tiny holes through which they pass and go into the blood stream (this is called ‘leaky gut’). Not every person has this problem, but those who do have it suffer a variety of chronic diseases.
Immune system molecules (called globulins or immunoglobulins or simply Ig ) attack those food particles and form a food-globulin complex that slowly attack organs and systems of the body and cause inflammation and disease. Nothing tells the person that his dinner of two nights ago or that same breakfast he’s been getting for the last 20 years are causing adverse effect: this micro-storm gives no signs. The effect is very slow and it may take days or weeks to cause medical problems .
The person doesn’t know it is happening.
Food sensitivity could be the cause of many of your symptoms
We don’t know why some people are sensitive to certain foods. We know that a range of factors increases the chances of developing food sensitivities. Some people inherit a sensitivity to certain foods, while others may develop them as a result of stress, medications, bad eating habits, antibiotics, food intolerance (like milk or flour attacking the intestine in certain individuals).

There are other causes as well:

flavoring, preserving, thickening, emulsifying, etc.
--contamination of food with germs, like parasites, Candida, bacteria and viruses. In these cases the recommended
tests are: 1) stool study for white blood cells, ova and parasites and 2) the ELISA Test for Candida.
Whether irritated by germs, chemicals, stress, medications , additives, etc., the irritation of the intestines creates micro-holes in the protective lining of the intestines, allowing tiny food particles to leak into the blood stream.
WHAT KIND OF FOOD?
Can be anything. Apples, almonds, grapes, peanuts, orange, bread, milk, eggs, lentils, yeast products, ketchup, yogurt, chocolate, raisins, tomato products, beef, pork, salami, grouper, soy, cream-cheese, banana, corn.
